How to ferment garlic in honey

Whole garlic cloves in raw honey produce a mellow syrup in 4 to 6 weeks. Covers technique, daily burping, the botulism question, and how to tell when it is finished.

What you'll need

  • A pint or quart glass jar with a tight-fitting lid Wide-mouth canning jars work best. The lid must seal well enough to invert the jar daily without dripping. Fill no more than 2/3 to leave room for expansion.
  • Raw, unpasteurized honey This is the non-negotiable ingredient. Pasteurized supermarket honey has been heated above 160°F and lacks the wild yeasts and bacteria needed for fermentation. Look for "raw" on the label or buy from a local apiary.
  • Fresh garlic Whole peeled cloves, ideally from a recent harvest. Older garlic with green sprouts works but the flavor is sharper. Plan on enough cloves to half-fill the jar.
  • A small wooden spoon or chopstick For the first week, you will turn or stir the jar daily to keep the cloves coated. Avoid prolonged metal contact; the acids that develop will corrode metal lids over weeks (keep a piece of parchment or wax paper between honey and metal lid if your lid is not plastic).
  • A label and a pen Write the start date on the jar. Honey ferments are slow, and you will lose track without a date.

TL;DR

Peel enough fresh garlic cloves to half-fill a clean glass jar. Pour raw, unpasteurized honey over the cloves until they are covered by about 1 inch, with the jar no more than 2/3 full (the ferment expands). Seal the lid. Label with the start date. Leave at room temperature, 60 to 75°F.

For the first 7 to 10 days, invert the jar once a day to keep cloves coated, and burp the lid to release CO2 (open briefly, then re-seal). After about 2 weeks, fermentation slows; burp weekly. What honey fermentation actually is

Honey is one of the oldest preserved foods on the planet and ordinarily does not ferment, because its water content is too low (typically 17 to 18%) for microbial growth. Yet raw, unpasteurized honey carries dormant wild yeasts and lactic-acid bacteria living on pollen grains and inside flower nectar.

When you add a fresh ingredient with substantial water content (like whole garlic cloves), the water released by that ingredient dilutes the honey enough to wake the dormant microbes. They begin slow fermentation: yeasts produce a small amount of CO2 and ethanol, bacteria produce lactic and acetic acids, and the whole jar gradually shifts from a sugar-dense preservation matrix into a low-acid, mildly alcoholic syrup.

Garlic is the classic ingredient because the resulting flavor is exceptional: harsh raw garlic mellows into something deeply aromatic and almost umami, while the honey absorbs garlic compounds and gains complexity it does not have on its own. The same technique works with peeled ginger, fresh chiles, and many other ingredients, but garlic is the cornerstone.

The conditions

Three variables matter for honey ferments:

  1. Raw honey. Pasteurized honey has been heated above 160°F and contains essentially no live microbes. It will dissolve the garlic flavor over weeks the same way infused oil does, but it will not ferment. Raw, unpasteurized, unheated honey is essential. Local apiary honey is most reliable; honey labeled “raw” at grocery stores varies in quality.
  2. Adequate moisture but not too much. Whole peeled cloves provide the right amount of water to start fermentation. Chopped or crushed garlic releases too much water too fast, which can spike water activity into the unsafe zone before acidity develops. Whole cloves only.
  3. Temperature: 60 to 75°F. Below 55°F fermentation effectively stops. Above 80°F the honey ferments faster but the garlic can take on a softer, mushier texture. The sweet spot is normal room temperature.

The variable people most often skip is daily inversion during the first week. Cloves above the honey line will discolor and may carry surface organisms; cloves submerged stay clean.

A word on botulism before you start

The honey + garlic combination is one of the few home ferments with a real, well-documented theoretical safety concern. The short version, with the longer version in the FAQ:

  • Garlic naturally carries Clostridium botulinum spores. This is true of all home-grown and store-bought garlic, fermented or not.
  • Raw honey is too dry for C. botulinum to grow. This is why plain honey is shelf-stable indefinitely.
  • During fermentation, the honey gets wetter as the garlic releases water. The first week is the risk window: water activity is rising, but pH has not yet dropped low enough (below 4.6) to inhibit C. botulinum.
  • By week 2, lactic and acetic acid production typically drops pH below 4.6, after which the jar is safe.

Most home fermenters never test pH and never have an incident. The recipe is genuinely popular and reasonably safe in practice. If you want extra confidence, refrigerate the jar for the first 7 to 10 days (refrigeration suppresses C. botulinum entirely), then move to room temperature once you see clear signs of fermentation (bubbles, slight thinning). This is the conservative approach and the one we recommend for first-timers.

Children under 12 months: never. Same rule as plain raw honey.

Step by step

1. Prepare the jar and the garlic

Wash a glass jar with a tight-sealing lid in hot soapy water. Air dry completely. Any water residue inside the jar contributes to water activity from minute one and is not desirable. Plastic lids are best; metal lids will corrode over weeks of contact with developing acid. If using a metal lid, place a square of parchment or wax paper between honey and lid.

Peel enough fresh garlic cloves to fill the jar about halfway. For a pint jar, that is usually 4 to 6 large heads of garlic worth of cloves. Cloves should be whole and unbroken; cut or crushed garlic releases too much water too fast.

2. Combine garlic and honey

Place the peeled cloves in the jar. Pour raw honey slowly over the cloves until they are covered by about 1 inch of honey above the topmost clove. Fill the jar no more than two-thirds full total; you need headspace for the ferment to expand without forcing honey out the lid.

Tap the jar gently on the counter a few times to dislodge air bubbles trapped between cloves. Seal the lid. Wipe any honey from the threads and outside of the jar (drips attract ants and fruit flies over the weeks ahead).

Label the jar with the start date.

3. Place and invert

Place the jar somewhere stable at room temperature, out of direct sunlight. A countertop or pantry shelf works. Put it on a small plate; some seepage and stickiness is normal as the ferment progresses.

For the first 7 to 10 days, invert the jar once a day. Tip it upside down, let it sit upside down for an hour or two (or until the next day), and then return it upright. This keeps cloves coated in honey as the liquid level shifts, and it prevents the topmost cloves from sitting dry above the honey line.

4. Burp daily during active fermentation

Each day, before or after you invert the jar, open the lid briefly to release built-up CO2. You should hear a small hiss within the first week, and a pronounced hiss by week 2. Re-seal after burping. A lid that becomes hard to open between burps means the jar is producing CO2 faster than you expected; burp more often.

If the jar is genuinely active, you will see:

  • Small bubbles rising slowly through the honey
  • The honey gradually thinning to a more pourable consistency
  • The garlic cloves starting to sink (they begin floating)
  • The honey color darkening over weeks toward amber

If after 2 weeks you see none of these signs, the honey was likely pasteurized despite the label. Start over with a different brand.

5. Slow phase, weeks 2 to 6

By week 2 to 3, the daily inversion is less critical because the cloves have sunk and stay coated. Burping shifts from daily to every few days, then weekly.

Continue at room temperature. Each week:

  • Open the jar briefly to release any CO2 buildup
  • Look at the cloves: they should be sinking, slowly turning translucent, and shifting from white toward amber
  • Smell: a developing aroma of mellowed garlic and slightly fermented honey, never sharp or rancid
  • Re-seal and continue

By the end of week 4, taste a small piece of garlic. Raw bite should be largely gone, replaced by a mellow sweet-savory flavor. If still sharply garlicky, leave it another 2 weeks.

6. Decide when to call it finished

There is no hard stopping point; the jar continues developing for months. Most fermenters consider a jar “finished” at 4 to 6 weeks, when:

  • Cloves are translucent or amber, no longer opaque white
  • Honey has thinned to syrup consistency
  • The flavor is balanced, sweet, complex, with no harsh raw garlic
  • Fermentation has slowed (very little CO2 production)

At that point, the jar can stay at room temperature indefinitely or move to the refrigerator. Many people leave it at room temperature and use directly from the jar, topping up occasionally with fresh garlic and honey.

What you might see along the way

Cloves floating, then sinking over weeks. Normal and expected. Fresh cloves are less dense than honey; as they take on honey and release water, density shifts and they sink. Floating cloves in week 1 are why daily inversion matters.

Honey turning darker and thinner. Both happen. Color shifts from light gold toward amber or brown over weeks. Consistency thins from thick honey to syrup. Both are signs of healthy fermentation.

Slight blue-green tint on cloves. Garlic occasionally turns blue or green from natural sulfur compounds reacting with trace metals in the honey or jar. Not harmful, not contamination. The reaction is well-documented and the cloves are still safe to eat. The discoloration usually fades over additional weeks.

A small layer of cloudy sediment at the bottom. Yeast and bacteria settling, plus dissolved plant material from the garlic. Normal. Stir back in or leave; either is fine.

A pleasant lightly alcoholic note in the smell. Yeasts produce small amounts of ethanol during fermentation. Honey ferments typically end below 2% ABV. The alcohol mellows in flavor over time and is part of the appeal.

Pressure that pops the lid open while you are nearby. Happens occasionally during peak fermentation in week 2 or 3. Not dangerous. Burp the lid down to ambient pressure and resume daily burping.

Common mistakes

Using pasteurized honey. The single most common reason a honey ferment fails to ferment. Read the label carefully; if it does not say “raw” or “unpasteurized,” it has been heated. Heated honey will not start a fermentation.

Chopping or crushing the garlic. Releases too much water too fast, spiking water activity into the unsafe zone before acidity develops. Use whole peeled cloves.

Filling the jar too full. A jar more than 2/3 full will leak honey through the lid as the ferment expands. Sticky, ant-attracting, and the leaked honey is hard to clean up. Always leave headspace.

Not burping. Pressure builds quietly during week 2 and 3 and can force honey through lid threads or, in the worst case, pop the lid open suddenly. Daily burping in the first 2 weeks prevents this entirely.

Skipping the daily inversion in week 1. Cloves sitting above the honey line discolor and can carry surface organisms that the developing acidity has not yet inhibited. Inversion keeps everything coated.

Treating the jar like canned food. This is a live ferment, not a shelf-stable preserve. The lid is sealed but the contents are alive and producing gas. Check on it.

Trying to speed it up with heat. Warming the jar above 80°F does speed fermentation but degrades flavor and softens the garlic into mush. Stick with room temperature; the slow ferment is part of the technique.

Troubleshooting

No activity after 2 weeks at room temperature. Honey was almost certainly pasteurized. Different brand needed. Some “raw” labeled honey is actually filtered and gently heated; honey direct from a local beekeeper is most reliable.

Honey staying very thick after 4 weeks. Either the garlic was old (less water release) or the honey is exceptionally low-moisture. Patience usually solves it; some jars take 8 weeks to reach syrup consistency. If genuinely nothing is happening, see the previous point.

Sharp acetone or solvent smell. Yeast stress from too-high sugar concentration relative to water. Add a teaspoon of filtered water, invert to mix, and continue. The smell should fade within a week as fermentation rebalances.

Cloves turned mushy and started disintegrating. Either too warm a fermentation temperature or the jar is just very old (over 6 months). Mushy cloves are still safe but not pleasant in texture. Strain out the cloves, use the infused honey, and start fresh.

Pinkish or reddish liquid appearing. Not common. Discard and start fresh. Pink-pigmented bacterial growth is rare on honey ferments but is a warning sign worth respecting.

Fuzzy growth on the surface or on cloves above the honey line. Surface mold. The jar should be discarded entirely if mold has grown. The most common cause is cloves left above the honey line for several days during week 1; this is why daily inversion matters.

Frequently asked

Is fermented honey garlic safe to eat? What about botulism?

It is widely consumed and generally considered safe when made correctly, but the botulism question is real and worth understanding. Clostridium botulinum spores can exist on garlic and in raw honey. Untreated honey has too low a water content (typically under 18%) and too high a sugar concentration to allow C. botulinum to grow. As garlic releases water during fermentation, the honey thins and water activity rises. Most home recipes stay safe because the pH drops below 4.6 within the first 1 to 2 weeks (lactic and acetic acid from the fermentation), which inhibits C. botulinum growth. The risk window is the first week, when water activity has risen but pH has not yet fallen. Conservative practice: refrigerate the jar during the first 7 to 10 days if you are uncertain, then move to room temperature once active fermentation is visible (bubbles, slight thinning of the honey).

Can I give fermented honey garlic to infants under one year old?

No. Raw honey in any form, fermented or not, should never be given to infants under 12 months because their digestive systems cannot yet inhibit C. botulinum spore germination. This is the same rule that applies to plain raw honey and is unrelated to whether the honey has been fermented. Children over one year and healthy adults are not at the same risk.

Why does the honey turn runny over time?

The garlic releases water as it ferments. Honey starts around 17 to 18% water; by the end of the ferment, the liquid in the jar may be 25 to 30% water. This thinning is normal and expected. It is also why pH measurement matters: as water content rises, the natural antimicrobial protection of dense honey weakens, and the developing acidity becomes the primary safety barrier.

How do I know when it is ready?

Visible signs: small bubbles in the honey, especially around the garlic cloves; honey that has thinned to a pourable consistency (closer to maple syrup than peanut butter); cloves that have sunk and turned slightly translucent or amber-brown. Taste signs: mellowed garlic with very little raw bite, sweet but slightly tangy honey, and a complex aged-sweet flavor distinct from plain raw honey. Most jars reach this state in 4 to 6 weeks at room temperature.

Can I use pre-peeled supermarket garlic?

Not ideal. Pre-peeled garlic is often treated with citric acid or other surface treatments to slow browning, which can suppress the wild ferment. It also tends to be older. Peeling fresh garlic is tedious but is part of the technique; one common shortcut is the two-bowl shake method (place cloves between two metal bowls and shake hard for 30 seconds).

My jar is bubbling and the lid is bulging. What do I do?

This is active fermentation, which is good. The fix is daily burping: open the lid briefly each day to release built-up CO2, then re-seal. A bulging or hard-to-open lid means you waited too long between burps. Burp immediately, then commit to daily for the next 2 weeks. After active fermentation slows (around week 3 to 4), weekly burping is enough.

How long does fermented honey garlic keep?

Years at room temperature, indefinitely in the refrigerator. The combination of low water activity (still under 30% at the end of fermentation), high sugar content, and developed acidity is hostile to nearly all spoilage organisms. Many people keep a jar going indefinitely, removing cloves and honey for use and topping up with fresh garlic and honey as the level drops.

A white film appeared on top. Is it kahm yeast or mold?

Most surface films on honey ferments are kahm yeast, harmless and skimmable. Honey ferments are unusually resistant to mold because of the sugar concentration. If the film is flat, smooth, and white or pale beige, it is kahm yeast; stir back in and continue.
